Blue Mango Veggie Burger Recipes
lue Mango Veggie Burgers are a far cry from typical veggie burgers. Fresh, flavorful, good and good for you, they surprise and delight vegans and carnivores alike. They taste amazing any way you prepare them. Here are a few of our favorite ways to enjoy the greatest veggie burger ever.
Mango Barbecue Sauce
- 1 tbsp canola or veg oil
- 2 cloves garlic
- 2 tbsp fresh ginger
- 2 tbsp ketchup
- 2 tbsp Dijon
- 3 tbsp brown sugar
- 1 tbsp sircha chili paste (or hot sauce)
- ½ cup white wine
- 1 lb frozen mangos
Sautee garlic and ginger deglaze with white wine. Add ketchup, Dijon, chili paste & brown sugar, stirring to combine. Add frozen mangos; cook down until mangos are soft. Transfer mixture to blender and blend until smooth. Let cool, and use as desired. Will keep in fridge for several weeks.
Orange-Red Onion Relish
- 1 medium red onion, diced
- 2 large oranges (remove rind and seeds and cut into small chunks)
- ¼ cup fresh cilantro, chopped
- 2 cloves garlic, chopped
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp sugar
- 1 tbsp apple cider vinegar
- Juice of 2 limes
- Zest of 2 limes
Combine ingredients into bowl, toss and keep in fridge until ready to serve
Thai Peanut Sauce
- 1 cup smooth peanut butter
- 2 tbsp toasted sesame oil
- 3 tbsp soy sauce
- 2 clove of garlic
- 1 tbsp chili paste (sambal)
- Juice of 2 limes
- Coconut milk or water
Combine peanut butter, sesame oil, soy sauce, garlic, chili paste and lime juice into food processor. Process until smooth, then add in coconut milk or water until desired consistency is achieved.
